Bacon-Roasted Brussels Sprouts

This is my favorite way to prepare Brussels Sprouts. It has everything that is good in the world: Brussels sprouts, salt, smoked black peppercorn, olive oil, balsamic vinegar, and of course, BACON!
I use smoked black peppercorn in place of regular black peppercorn pretty much every chance I get.. the stuff is heavenly, what can I say?
The olive oil I used for this recipe is a home-made black garlic-infused kalamata olive oil; I highly recommend you keep a few infused olive oils on-hand for an extra subtle hint of flavor.

Garlic Cauliflower Rice... A delicious, healthy side dish that has become a favorite of my clients. I came up with this recipe because I love oatmeal cookies… but I hate when people put raisins in them! I wanted to add something that would contribute to the wonderfully chewy nature of oatmeal cookies but not the gooey, fruity chewiness that raisins bring to them. I wanted something more neutral, more subtle. My first thought was to use shredded coconut and so I tried it out that very same day! It worked even better than I expected it to, and these have now become my favorite cookie to make and eat. Many friends and family members have enjoyed them, as well!
