Garlic Cauliflower Rice... A delicious, healthy side dish that has become a favorite of my clients. I used to hate making it (because it was a mess to "rice" the cauliflower by hand) but with a simple food processor, this simple carb substitute can be yours in half the time it takes to cook white rice! My wife loves this cauliflower rice, and it's a great way to make sure you are eating your vegetables instead of more and more carbs. If you're looking to sub out some carbs and eat more veggies but not give up tastiness, look no further! |
Garlic Cauliflower Rice
yield: about 3.5 cups

- 2 Lbs. Cauliflower (florets and stalks)
- 3 Tbps. — Your favorite sauté oil (refined olive oil, rendered bacon fat...)
- 1/2 to 3/4 Tsp. — Kosher Salt
- 2 Tsp. — Freshly Ground Black Peppercorn (I like to use Smoked Black Peppercorn)
- 1-2 Tbps. — Garlic Powder (2-3 Tbps. if you're Italian.)
Chop up the cauliflower into small grains and strands. This is a lot easier if you have a food processor and even easier still if your food processor has a circular grater! In a large sauté pan, heat the oil on high heat. When the oil is hot, put all of the riced cauliflower into the pan and immediately mix thoroughly. Add 1/2 of the salt and peppercorn, mix thoroughly again. Let the cauliflower rice sit for 2-3 minutes at a time, letting the bottom brown a bit before mixing thoroughly again. When the color has darkened significantly, add your garlic powder, the rest of the salt and peppercorn, and mix it up real good, again. Another 2 minutes later and you're all done! Serve with steak or salmon and green beans or asparagus! | |
Garlic cauliflower rice is a really easy way to squeeze more vegetables into your life! It goes best with fish, in my opinion, but I've taken a liking to it with my steak, as well. I never thought cooking so much cauliflower rice would eventually win me over to it, but... here I am, cooking it almost every week for my clients and happily consuming the leftovers ...
